Re moving a massive mirror "by hand" -- I would argue that that has been done by LIGO. The mirror is 40KG, the "by hand" is via the laser beam (the quantum fluctuations in it) and the quantum by the two mode squeezing.

I'm confused about a point, classically one can only measure average values, but in a free theory the perturbation in the expectation values generated by a source, such as the radiation of generated by a charge, do not depend on the state of the field so it should not reveal the thermal bath, right? It could be calculated in the rindler vacuum
